Ingredients: 2 large cucumbers
1 1/2 C non-fat, plain Greek yogurt
1 C coarsely chopped roasted walnuts
salt and pepper
Optional fresh parsley
Directions: 1. Peel cucumbers, slice length-wise, scoop out seeds and discard.
2. Slice into half-moons and place in a colander with a bowl under it to drain..
3. Salt generously and refrigerate for 20 - 30 minutes.
4. Stir, then shake and drain. Dry with a paper towel.
5. Stir in yogurt to coat evenly, then salt and pepper to taste.
6. Serve with walnuts and optional chopped fresh parsley on top.
Broccoli Baked with CheeseNumber of Servings: 6

Ingredients: 12 oz. steamed broccoli, chopped
1 C shredded cheddar
2 eggs
1/2 C Parmesan
Dry ranch dressing mix, 1/2 package
Directions: Preheat oven to 400. Line a baking sheet with parchment paper. Whip eggs with a fork then mix in cheeses and ranch dressing til blended. Stir in brocolli. Shape into sticks, about 3 inches long and 1/2 inch thick and place on baking sheet. Bake for 20 minutes, turning half way through. Serve immdiately.
