Broccoli Cauliflower Salad

Ingredients: 1 head cauliflower 1 head broccoli 2 large carrots 1 C mayo 1/2 C cider vinegar 1/4 - 1/2 C sugar 3 pieces cooked crumbled bacon 1/2 C golden raisins 1/3 C chopped red onions
Directions: Chop vegetables in small pieces and stir all items together. Blend mayo, vinegar and sugar and pour over vegetables. Toss, chill and enjoy.

Ingredients: 1 small head cabbage, grated 4 T sugar 2 T cider vinegar 4 T mayo 2 T Lemon juice grated carrots
Directions: Blend together sugar, vinegar and mayo. Toss with cabbage and carrots and chill. Optional ingredients: 2 stalks celery and/or 1/2 green pepper, chopped.
Comments: This recipe is from Peggy aboard "Palace Gypsy" and comes from a cookbook compiled by cruisers in the Abacos.
Easy Cucumber Salad

Ingredients: 2 large cucumbers 1 1/2 C non-fat, plain Greek yogurt 1 C coarsely chopped roasted walnuts salt and pepper Optional fresh parsley
Directions: 1. Peel cucumbers, slice length-wise, scoop out seeds and discard. 2. Slice into half-moons and place in a colander with a bowl under it to drain.. 3. Salt generously and refrigerate for 20 - 30 minutes. 4. Stir, then shake and drain. Dry with a paper towel. 5. Stir in yogurt to coat evenly, then salt and pepper to taste. 6. Serve with walnuts and optional chopped fresh parsley on top.
Comments: This recipe will need more salt than you might think. First enjoyed ashore on a hot summer day in New London, CT. I asked the waiter for a suggestion and he said, "I will make you something that is not on the menu and that I bet you have never had ." He was right!
Broccoli Baked with Cheese

Ingredients: 12 oz. steamed broccoli, chopped 1 C shredded cheddar 2 eggs 1/2 C Parmesan Dry ranch dressing mix, 1/2 package
Directions: Preheat oven to 400. Line a baking sheet with parchment paper. Whip eggs with a fork then mix in cheeses and ranch dressing til blended. Stir in brocolli. Shape into sticks, about 3 inches long and 1/2 inch thick and place on baking sheet. Bake for 20 minutes, turning half way through. Serve immdiately.
